Swapping out the chain on my Voltbike bravo

I just tackled my first chain replacement on the Voltbike Bravo, the original had 124 links, but the new one came with 126 and now I'm stuck, should I take out two links or run it as-is?

If the old one had 124, I think you should match it and remove the extra two links. Running it longer can cause sloppy shifting and extra wear on the drivetrain.

My fat bike came with a 126 link chain, it was the cheapest standard chain you could buy, not even rated for use with an ebike. I checked the chain online, it was like £6, so I contacted the manufacturer, and they recommended an ebike chain, £28 at Halford. The gear changes were a bit hit or miss, so I used a couple of formulas to determine the number of links, and it came out at 124, so I cut it to 124, and it worked perfectly, so the ordinal chain was too long. https://www.wikihow.com/Measure-a-Bike-Chain

I've seen some slight variations in link sizes, so that could be the reason why you're having this predicament. Remove two links and do a test fit. If it's good, then you have nothing to worry about. If it's tight, then you might need to add a link. On the other hand, if it's sloppy, you might want to remove another link.
